A&S made it's first batch of mozzarella in 1978 and ever since no one has produced the finest and best tasting mozzarella. Mozzarella was first made in Italy using "latte di bufala" or milk from bufallo in Campana. It was then made using cow's milk known as mozzarella "fior di latte" or mozzarella made from milk which was milk from a cow. A&S used this new way of making mozzarella and incorporated a meticulous and precise method of making the freshest and best tasting mozzarella in New York.
